Nutrition Studies (Vitamins and Minerals): Course Description
The introductory course 'Nutrition Studies (Vitamins and Minerals)' shows students how minerals and vitamins are an important part of a healthy diet. The first part of the OpenCourseWare examines two different groups of vitamins: water-soluble vitamins and fat-soluble vitamins. The course introduces the essential fat-soluble A, D, E and K vitamins that are required for a healthy lifestyle. These vitamins can be absorbed and stored in the body for a longer period of time. Vitamins, such as B and C, are water-soluble and can be lost during the cooking process in food and are removed easily from the body through urination.
In order for a person to keep any water-soluble vitamins in their system, they must frequently take in the vitamins to maintain their essential nutrients. The course covers each vitamin from both groups in detail and explains the benefits of vitamins in a healthy diet and the effects of vitamin deficiency. The second part of the OpenCourseWare discusses minerals, electrolytes and fluids. These important minerals include chlorine, calcium, sodium, potassium and magnesium. Minerals are also part of a healthy diet that helps form strong teeth and bones.
